With baking on the rise over the last year, there has been an abundance of recipes and creative concoctions shared. Beautiful pictures have popped up on social media and many attempts have been made to copy these images. I tried, but my goodies often come out looking quite unique! What I appreciate are simple recipes, yummy ingredients and delicious food. The Groovy Food Company Organic Coconut Flour is a lovely ingredient and a great alternative to your everyday supermarket flour. 100% natural and organic, the flour is made from ground dried coconut and is rich in fibre and protein.
This organic flour is versatile and can be used to make breads, cakes, muffins, pancakes and desserts, as well as added to smoothies and shakes. I have mostly used it to make muffins and banana bread as I like the mild sweetness of the flour which compliments these tasty treats.
The Groovy Food Company has shared a recipe for healthy coconut banana bread, using their organic coconut flour. It’s so simple to make, you basically throw everything in a bowl, mix, then bake. Simple. I have made this several times and used this same recipe to make muffins too. Not only do the muffins taste delicious, but your kitchen smells wonderful too!
Healthy Coconut Banana Bread
Ingredients:
- 3 Ripe Bananas
- 5 Medium Eggs
- 4 Pitted Dates, Mashed
- 2 tsps. Vanilla Extract
- 60 ml The Groovy Food Company Coconut Oil
- ½ tsps of ground Cinnamon
- 2 tsps of baking Powder
- 70g The Groovy Food Company Organic Coconut Flour
- 2 tbsps. Chia Seeds
- (I also add walnuts and dark chocolate chunks)
Method:
- Preheat oven to 160°c and line a loaf tin with baking paper
- Mix all ingredients in a food processor or mixer
- Pour mix into loaf tin
- Cook for approx. 50-55 mins or until skewer comes out clean and the top is golden brown
- Let cool, then enjoy! Can be sliced and toasted later, if there’s any left over!
Final Thoughts:
The Groovy Food Company Organic Coconut Flour is a lovely alternative to ordinary flour as it has a subtle mild sweetness. It is slightly thicker, so I found that I needed to add a little water to my recipes.
The flour isn’t just for sweet treats… I have recently used the flour to make sweet potato fries… delicious! This flour can be used to make batter for BBQ food, or tempura; coconut fried fish is delicious.
