Described as ‘delicious’ by smoothie critic and writer, Tom Gash, we know we’re onto a winner with this recipe. It’s fresh and zingy and wakes you up in the mornings with its startling goodness. Plus, we’ve sneaked spinach in there too.
This pineapple and mint smoothie is great for those with digestive problems. Not only does mint calm troubled stomachs, but pineapple contains bromelain which is said to consist of protein-digesting emzymes. There’s no hard evidence for it yet, but many healthcare practitioners have reported improved digestion amongst their patients who eat pineapple as part of their meal plan.
Ingredients
- 1/3 ripe pineapple
- 2 handfuls of fresh spinach
- 1/2 handful of fresh mint
- 1 tbsp ground flaxseed
- 1 tsp chia seeds
- Water
Method
- Put all ingredients, except for the chia seeds, into a blender and top with water.
- Blend until smooth.
- Add in the chia seeds, stir and then blend again for a few seconds.
- Serve immediately.
We discovered it makes so much different adding the chia seeds at the end – otherwise they just get all clumpy and stick to your blender or the sides of your bowl. The chia seeds will eventually start ‘plumping’ and releasing a gelatinous outer layer that will help slow down digestion which helps prevent sugar spikes in your system.
